Woodstack BBQ Tavern: Thomasville’s New Smoke Show

While cruising through Thomasville, Georgia this past Friday, I spotted a new barbecue joint—and just in time for lunch. Naturally, I had to pull over and check it out.
Say hello to Woodstack BBQ Tavern. You’ll find the Thomasville location at 2128 Smith Ave., Thomasville, GA 31792 (phone: 229-236-7150). This spot serves up authentic Southern barbecue, and it’s actually their second location—the original is in Valdosta, GA. Now, listen. In a Southern town already jam-packed with "barbecue joints", you’d think I’d roll my eyes and keep driving. But nope—I was excited. Why? Because most local BBQ spots in Thomasville aren’t exactly safe for Celiacs, and this one gave me hope. I walked in, asked if they could accommodate gluten allergies, and the server smiled and said, “Yes, ma’am, we do.” Cue the happy dance.

♿ Accessibility Check
The restaurant is spacious, open, and easy to navigate. There’s a ramp outside for my readers who roll, and the bathroom was clean—probably the cleanest I’ve seen in a restaurant in ages. The sink is a little high, so washing hands could be tricky for some, but overall? Solid accessibility points.
🍽 Let’s Talk Food (Because You Don’t Care About the Bathroom)
The menu is stacked with more than just traditional BBQ beef, chicken, & pork. We’re talking smoked salmon dip, a black bean quinoa burger, crispy duck leg, and a whole section dedicated to burnt ends (FYI: that’s the fat cap of brisket—think "beef bacon"). Sadly, burnt ends aren’t always available, so ask before you get your hopes up.
My husband Andy ordered The Cuban with baked beans. I went for a sandwich too—but bunless because #CeliacLife. And y’all, I couldn’t resist the one called The Dirty South. Pulled pork + pimento cheese + house pickles + Southern mustard BBQ sauce = heaven. Since no bun for me, they plated everything separately so I could build my own bites. For my side, I picked braised greens.

🥬 The Greens Deserve Their Own Moment
These were some of the BEST greens I’ve ever had in my 40 years of living in South Georgia. I didn’t even need salt (and that’s saying something). Sweet, savory, and full-on soul food perfection.
I skipped the pickles—they smelled spicy and my stomach doesn’t play that game—but the pimento cheese? Creamy, rich, and a perfect match for the smoky pork. Honestly, if I’d had GF bread, I would’ve made the dream sandwich right there.
Now for the star: the pulled pork. Tender, smoky, not too fatty, and absolutely melt-in-your-mouth. That mustard BBQ sauce? On point. Easily some of the best barbecue I’ve had in a LONG time.

🍖 Andy’s Plate (Not GF, but Worth Mentioning)
Andy’s Cuban was stacked with sliced pork loin, pulled pork, mustard, mayo, Swiss cheese, and pickles on a hoagie, served with a mojo dipping sauce that smelled AMAZING—full of herbs and rosemary. Let’s just say there wasn’t a crumb left on his plate. He also raved about the baked beans—said they had that deep BBQ flavor that makes you wanna lick the bowl.
🙌 Service Vibes
Our server was a rockstar. Attentive, friendly, knowledgeable about celiac disease, and quick to double-check anything with the kitchen. That’s the kind of care that makes me wanna come back again and again.
🚗 Parking Tip
Parking is limited, and the asphalt spots filled up fast at lunch. But if you’re driving a Jeep or truck, you’ll fit right in parking on the grassy area to the left of the restaurant—everyone else does. Handicap parking is right by the front door.
